Bang Bang Chicken Bowl

A flavorful dish combining tender chicken, a creamy sauce, and fresh veggies served over fluffy rice.

  • 2 cups cooked rice
  • 1 lb chicken breast (cut into bite-sized pieces)
  • 1/2 cup mayonnaise
  • 34 tablespoons sweet chili sauce
  • 12 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 cup mixed fresh veggies (e.g., bell peppers, broccoli, carrots)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions. If using leftover rice, reheat it with a splash of water.
  2. Prepare the chicken by seasoning with salt and pepper. Heat the olive oil in a skillet and cook the chicken for 5-7 minutes until golden brown.
  3. Make the sauce by whisking together mayonnaise, sweet chili sauce, sriracha, soy sauce, and lime juice. Pour half over the cooked chicken.
  4. Add the mixed veggies to the skillet and stir-fry for about 3-5 minutes until tender.
  5. Mix in the chicken and remaining sauce, warming for an additional minute.
  6. Assemble bowls with rice and top with the chicken and veggies. Drizzle with extra sauce and garnish with fresh herbs.

Notes

For a lighter option, substitute chicken with tofu or use Greek yogurt instead of mayonnaise.
