Bang Bang Salmon Bites

Crispy and flavorful salmon bites coated in a creamy bang bang sauce, perfect for any gathering or a cozy dinner at home.

  • 1 lb fresh salmon, skinless and cut into bite-sized cubes
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado, sliced
  • ½ cup shredded carrots
  • 2 green onions, sliced
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the seasoning blend in a bowl by mixing garlic powder, smoked paprika, salt, and pepper.
  3. Coat the salmon cubes in the seasoning mixture until evenly coated.
  4. Bread each piece of salmon in the panko breadcrumbs and place them on a baking sheet lined with parchment paper.
  5. Drizzle olive oil over the panko-covered salmon.
  6. Bake for 12-15 minutes, or until golden brown and cooked through.
  7. Prepare the bang bang sauce by mixing mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice in a bowl.
  8. Serve the salmon bites on a bed of rice, drizzled with sauce, and topped with cabbage, carrots, avocado, green onions, cilantro, and sesame seeds.

Notes

You can make it gluten-free by using gluten-free panko breadcrumbs. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
