  • ½ cup blueberries (fresh or thawed if frozen)
  • 1 loaf day-old brioche, sliced thick (8 slices)
  • 1 egg
  • ½ cup milk
  • ½ cup cream
  • 1 teaspoon cinnamon
  • Butter, for frying
  • Extra blueberries, for topping
  • Icing sugar, for dusting
  • Maple syrup, for drizzling

Instructions

  1. Prepare the Cheese Filling: In a mixing bowl, combine the softened cream cheese, caster sugar, and vanilla extract. Blend until smooth and creamy. Set aside to chill.
  2. Add Blueberries: Gently fold in the blueberries into the cream cheese mixture.
  3. Slice the Brioche: Cut into thick slices (about 1 inch).
  4. Stuff the Bread: Spread blueberry cream cheese filling on one side of each brioche slice and press together.
  5. Prepare the Egg Mixture: Whisk together the egg, milk, cream, and cinnamon in a bowl.
  6. Soak the Stuffed French Toast: Place the sandwiches in the egg mixture for 2-3 minutes on each side.
  7. Heat the Pan: Melt butter over medium heat in a skillet.
