Blueberry Heaven Cookies

Tender cookies bursting with juicy blueberries, reminiscent of summer afternoons spent in the garden.

Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter and granulated sugar together until light and fluffy.
  3. Add the egg and vanilla extract to the creamed mixture and beat until well combined.
  4. Combine the all-purpose flour, baking powder, and salt in a separate bowl, then gradually mix into the wet ingredients.
  5. Fold in the fresh blueberries gently.
  6. Scoop rounded tablespoons of dough onto a lined baking sheet, leaving space between each cookie.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Cool for 5 minutes on the baking sheet before transferring to a wire rack.

Notes

For a vegan option, substitute the egg with a flax egg and butter with coconut oil or vegan butter. Store cookies in an airtight container for up to a week.
