Blueberry Lavender Vegan Madeleines

Delightful vegan madeleines infused with the flavors of blueberry and lavender, perfect for tea time or a special treat.

  • 1 cup all-purpose flour
  • ½ cup almond flour
  • ½ cup granulated sugar or coconut sugar
  • 2 tablespoons culinary lavender (dried)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup almond milk (or plant-based milk of your choice)
  • ¼ cup melted coconut oil (or any neutral oil)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a madeleine pan.
  2. Mix the dry ingredients: in a bowl, whisk together all-purpose flour, almond flour, baking powder, salt, and dried lavender.
  3. Combine the wet ingredients: in another bowl, mix almond milk, melted coconut oil, vanilla extract, and sugar until well blended.
  4. Fold the wet ingredients into the dry, stirring gently to combine.
  5. Gently fold in the blueberries.
  6. Scoop the batter into the pan, filling each shell mold about ¾ full.
  7. Cool the madeleines after baking for 10-12 minutes and dust with powdered sugar before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for a week.
