Blueberry Peach Feta Salad

A vibrant summer salad bursting with juicy peaches, sweet blueberries, creamy feta, and crunchy nuts.

  • 2 cups fresh blueberries
  • 2 ripe peaches, sliced
  • 1 cup feta cheese, crumbled
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts, chopped (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Wash and prepare the fruits: Rinse the blueberries under cold water and drain thoroughly. Slice the peaches into wedges.
  2. Slice the red onion: Thinly slice the red onion and set aside.
  3. Mix the greens: In a large salad bowl, add your mixed greens and toss gently.
  4. Add the fruits and nuts: Gently fold in the blueberries, peach slices, and walnuts (if using).
  5. Crumble the feta: Sprinkle crumbled feta cheese on top of the salad.
  6. Dress it up: Drizzle olive oil and balsamic vinegar over the salad, then sprinkle with salt and pepper.
  7. Taste and adjust: Sample and add lemon juice or more balsamic vinegar for flavor if desired.
  8. Serve immediately in a large serving dish, optionally topping with extra blueberries and peach slices.

Notes

Best enjoyed fresh. Can be prepped ahead of time, but assemble just before serving to avoid sogginess.
