Cajun Chicken with Bell Peppers

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Cooked rice or pasta, for serving

Instructions

  1. Prep the chicken by patting it dry and applying Cajun seasoning.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the chicken breasts for 5-7 minutes on each side until golden brown.
  4. Remove the chicken and let it rest on a plate.
  5. Saute the sliced onion and bell peppers in the same skillet for 3-4 minutes.
  6. Add minced garlic and sauté for another minute.
  7. Combine sliced chicken back into the pan and season with salt and pepper to taste.
  8. Serve over warm rice or pasta, garnished with fresh herbs if desired.
