Chicken Kofta with Creamy Garlic Yogurt Sauce

  • 1 pound ground chicken
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced (for yogurt sauce)

Instructions

  1. Prepare your workstation. Preheat your oven or grill to 400°F (200°C).
  2. Make the kofta mixture. In a large mixing bowl, combine the ground chicken, chopped onion, minced garlic, cumin, paprika, salt, black pepper, and parsley. Mix until well incorporated.
  3. Form the kofta. Shape the mixture into small ovals or logs, about 2-3 inches long.
  4. Cooking the kofta. For oven method, place on a baking sheet and bake for about 20-25 minutes until golden brown. For grilling method, cook on preheated grill for 10-12 minutes, turning until cooked through.
  5. Whip up the creamy garlic yogurt sauce. Mix yogurt, lemon juice, minced garlic, salt, and black pepper in a medium bowl. Taste and adjust seasoning as needed.
  6. Serve and enjoy! Plate the kofta with a dollop of creamy garlic yogurt sauce and sprinkle with fresh parsley.

Notes

The yogurt sauce can be made a day ahead for enhanced flavors. Serve with couscous or pita and grilled vegetables.
