A quick and flavorful Chicken Zucchini Stir Fry that can be whipped up in under 30 minutes, perfect for busy weeknights.

  • 2 chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Prep Your Ingredients: Start by cutting the chicken into bite-sized pieces and slicing the zucchinis. Make sure everything is ready before you heat the pan.
  2. Heat the Pan: Place a large skillet or wok over medium-high heat. Add the olive oil, and once it’s shimmering, add the chicken.
  3. Cook the Chicken: Toss the chicken pieces into the pan in a single layer. Sear undisturbed for about 3-4 minutes, then toss and cook for another 3-4 minutes until fully cooked.
  4. Add the Garlic: Once the chicken is cooked, add the minced garlic to the pan and sauté for about 30 seconds.
  5. Add the Zucchini: Stir in the sliced zucchinis and sauté for an additional 4-5 minutes until tender yet crisp.
  6. Season It Up: Drizzle the soy sauce over the stir fry and mix everything together. Adjust seasoning as needed.
  7. Remove and Serve: Once cooked, remove the stir fry from heat and serve immediately.
