  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Marinade: In a medium bowl, combine lime juice, cilantro, minced garlic, ground cumin, salt, and black pepper. Slowly whisk in olive oil until well blended.
  2. Marinate the Chicken: Place chicken in a resealable bag, pour marinade over, seal, and refrigerate for at least 30 minutes.
  3. Preheat the Grill or Skillet: Heat to medium-high and oil the grates or drizzle oil in the skillet.
  4. Grill the Chicken: Remove chicken from marinade, discard leftovers, and grill for 6-7 minutes per side until cooked through and 165°F (75°C).
  5. Rest the Chicken: Transfer to a cutting board and let it rest for 5-10 minutes.
  6. Slice and Serve: Slice chicken against the grain and serve with rice, grilled veggies, or tacos.

Notes

For extra flavor, let the chicken marinate for up to 1 hour. Consider adding a touch of honey for balance if desired.
