12 ounces pasta of your choice (penne or fettuccine)
1 pound chicken breast, boneless and skinless, cut into bite-sized pieces
4 tablespoons unsalted butter
4 cloves garlic, minced
1 medium onion, diced
1 cup heavy cream
1 cup low-sodium chicken broth
1 cup grated Parmesan cheese
1 tablespoon Italian seasoning
1 teaspoon red pepper flakes (adjust to taste)
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Boil a large pot of salted water. Add your pasta and cook until al dente, according to package instructions. Reserve some pasta water and drain.
Season the chicken pieces with salt and pepper, then heat 2 tablespoons of butter in a skillet. Add chicken and cook until golden brown, about 5-7 minutes. Remove and set aside.
Add the remaining butter to the same skillet. Sauté garlic and onion for 2-3 minutes until fragrant.
Pour in the heavy cream and chicken broth, stirring and scraping up the flavorful bits. Add Parmesan cheese and Italian seasoning, mixing until melted.
Toss in the cooked pasta and chicken with red pepper flakes. Stir until everything is well coated and warmed through. Adjust seasoning to taste.
Garnish with parsley and serve immediately.
Notes
Serve in rustic bowls with extra Parmesan and a side of crusty bread.
