Creamy Chicken and Rice

  • 2 cups chicken broth
  • 1 cup rice
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Olive oil or butter for cooking
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the chicken: Season chicken breasts with salt and pepper. Heat olive oil or butter in a skillet over medium-high heat, and add chicken. Cook for 5-7 minutes on one side, then flip and cook another 5-7 minutes until cooked through. Remove and set aside.
  2. Sauté the aromatics: In the same skillet, add more oil or butter if needed. Add chopped onion and cook for about 3 minutes until translucent, then add minced garlic and cook for 1 more minute.
  3. Add the rice: Stir in the rice and toast for a minute to enhance flavor.
  4. Pour in the broth: Gradually add chicken broth, scraping the bottom for flavor, then bring to a gentle simmer.
  5. Create the creamy base: Nestle the chicken back into the skillet, remove from heat, and stir in heavy cream.
  6. Simmer away: Cover and let it simmer for about 15-20 minutes.
  7. Finishing touches: Remove chicken, shred or slice, and stir back into the rice mixture.
  8. Serve it up: Garnish with parsley if desired and enjoy!
