Creamy Gnocchi with Spinach and Feta

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions (usually around 2-3 minutes or until they float to the surface).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Toss the fresh spinach into the skillet, stirring it into the garlic.
  4. Pour in the heavy cream and swirl everything together. Bring to a gentle simmer and let it thicken slightly for about 3-5 minutes.
  5. Once the gnocchi is done cooking, drain and transfer it directly to the skillet with the creamy sauce.
  6. Crumble the feta cheese over the top and stir gently to incorporate.
  7. Season with salt, pepper, and red pepper flakes to taste.
  8. Serve immediately, garnished with a sprinkle of extra feta and a squeeze of lemon if desired.
