Creamy Spinach and Mushroom Lasagna

A warm and cheesy lasagna layered with fresh spinach, earthy mushrooms, and a creamy béchamel sauce.

  • 3 Garlic cloves, minced
  • 2 cups Mushrooms, sliced
  • 3 cups Spinach, fresh
  • 3 tbsp All-purpose flour
  • 1/2 tsp Nutmeg, ground
  • 2 Salt and pepper, to taste
  • 2 tbsp Olive oil
  • 3 tbsp Butter
  • 3 cups Milk
  • 2 cups Mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 cup Ricotta cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the vegetables in olive oil and butter until fragrant, adding garlic, then mushrooms, followed by seasoning.
  3. Add the fresh spinach and stir until wilted.
  4. Make the béchamel sauce by whisking butter and flour, then adding milk gradually.
  5. Combine the sautéed mixture with ricotta cheese.
  6. Layer the lasagna with noodles, filling, béchamel, and cheese until all ingredients are used.
  7. Bake for 25 minutes, covered, then remove foil and bake for an additional 20-25 minutes until golden brown.

Notes

Let the lasagna rest for 10-15 minutes before slicing for easier serving.
