Creamy Tomato Chicken Pasta

A comforting and flavorful creamy tomato chicken pasta dish that’s perfect for busy weeknights.

  • 8 oz Pasta (Penne or Fettuccine)
  • 1 lb Chicken Breast, diced
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 cup Heavy Cream
  • 2 cloves Garlic, minced
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoon Red Pepper Flakes
  • Salt and Pepper to taste
  • 2 tablespoons Olive Oil
  • Fresh Basil, for garnish (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook your chosen pasta according to package instructions until al dente. Remember to reserve about a cup of pasta water before draining.
  2. Sauté the Chicken: Heat the olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper. Sauté until golden brown, about 7-8 minutes.
  3. Add the Garlic: Once the chicken is done, add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Make the Sauce: Pour in the can of diced tomatoes and stir in the Italian seasoning and red pepper flakes. Bring to a gentle simmer and let bubble for 4-5 minutes.
  5. Incorporate the Cream: Lower the heat and add the heavy cream. Stir continuously until smooth, adding reserved pasta water as needed for desired consistency.
  6. Combine Pasta and Chicken: Add the drained pasta to the skillet and toss everything together, adding reserved pasta water if needed.
  7. Taste and Adjust: Adjust seasonings to taste, and add more red pepper flakes if desired.
  8. Garnish and Serve: Serve in bowls, garnished with fresh basil if desired.

Notes

You can substitute chicken for tofu or chickpeas for a vegetarian version, and adjust the spice level to your liking.
