Refreshing Cucumber Dill Salad

A crisp and refreshing cucumber salad with creamy Greek yogurt and fragrant dill, perfect for summer gatherings.

  • ¾ cup Greek yogurt (or plain full-fat yogurt)
  • 1 ½ tablespoon extra virgin olive oil
  • 1 ½ tablespoon lemon juice
  • ¼ teaspoon grated garlic
  • ½ teaspoon fine salt
  • ⅕ teaspoon black pepper
  • 1 ½ lb (670 grams) cucumbers, sliced
  • ½ red onion, finely sliced
  • ¼ cup fresh dill, chopped

Instructions

  1. Prepare the Cucumbers: Peel (if preferred) or leave the skin on, then slice thinly—about ¼ inch thick. Sprinkle with salt and let sit in a colander for 15 minutes.
  2. Make the Dressing: In a mixing bowl, whisk together Greek yogurt, olive oil, lemon juice, grated garlic, salt, and black pepper until well combined.
  3. Slice the Red Onion: Aim for thin slices, or soak in cold water if sensitive to raw onion.
  4. Combine: In a large mixing bowl, toss prepared cucumbers, sliced red onion, and chopped dill. Pour dressing over and mix gently.
  5. Chill and Serve: Refrigerate for 30 minutes before serving for best flavor.

Notes

For a zestier flavor in the dressing, add lemon zest. This salad can be made ahead of time and is great for potlucks.
