Flavorful Greek Lemon Rice

A bright and zesty rice dish that is perfect as a side for any meal, infused with fresh lemon and herbs.

  • 1 cup Long-Grain Rice (Basmati or Jasmine recommended)
  • 2 cups Chicken Broth (or Vegetable Broth for a vegetarian option)
  • 1/4 cup Fresh Lemon Juice
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Fresh Parsley, chopped

Instructions

  1. Rinse your rice in cold water until the water runs clear.
  2. Sauté the rinsed rice in olive oil for 2–3 minutes until golden.
  3. Add the chicken broth, lemon juice, and lemon zest to the pan.
  4. Season with salt and black pepper, then adjust to taste.
  5. Boil the mixture, then reduce heat, cover, and simmer for 18–20 minutes.
  6. Fluff the rice with a fork and stir in chopped parsley.
  7. Plate the rice into a serving dish, garnishing with lemon slices or parsley.

Notes
