Fresh Spring Rolls with Peanut Sauce

Fresh and vibrant spring rolls filled with colorful veggies and served with a creamy peanut sauce, perfect for a light meal or appetizer.

Ingredients

  • Rice Paper Wrappers
  • Assorted Vegetables (e.g., bell peppers, carrots, cucumbers, lettuce)
  • Fresh Herbs (e.g., mint, cilantro)
  • Creamy Peanut Sauce (store-bought or homemade)
  • Optional Protein (e.g., shrimp, chicken, or tofu)

Instructions

  1. Prep your ingredients by washing and slicing your assorted vegetables into thin strips.
  2. If you’re using protein, cook it according to your preference.
  3. Fill a shallow dish with warm water and gently dip one rice paper wrapper for about 10-15 seconds until softened.
  4. Place the softened wrapper on a clean surface.
  5. Add a small handful of lettuce at the lower third of the rice wrapper and layer sliced vegetables and your choice of protein on top.
  6. Sprinkle fresh herbs over the fillings for flavor.
  7. Roll the wrapper tightly, folding in the sides as you go.
  8. Repeat with all wrappers, placing each roll seam-side down.
  9. Mix the peanut sauce if making homemade with creamy peanut butter, soy sauce, lime juice, and water.
  10. Arrange the spring rolls on a platter with the peanut sauce on the side for dipping.

Notes

Experiment with different fillings and enjoy the process of making these rolls. They can also be prepared ahead of time and stored in the fridge.
