Garden Fresh Asparagus and Tomato Ravioli Toss

A vibrant and easy pasta dish featuring fresh asparagus and cherry tomatoes, perfect for busy weeknights.

Ingredients

  • Fresh asparagus, cut into pieces
  • Cherry tomatoes, halved
  • Ravioli (fresh or frozen)
  • Olive oil
  • Garlic, minced
  • Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the ravioli by bringing a large pot of salted water to a gentle boil, then add ravioli and cook according to package instructions.
  2. Reserve a cup of pasta water before draining.
  3. Sauté the garlic in olive oil over medium heat for about 30 seconds until fragrant.
  4. Add the asparagus pieces and cook for a couple of minutes before adding the cherry tomatoes.
  5. Incorporate the cooked ravioli gently with the veggies, adding reserved pasta water if needed.
  6. Finish with grated parmesan cheese and season with salt and pepper.
  7. Garnish with fresh basil and serve.

Notes

Feel free to add proteins like chicken or shrimp and substitute olive oil with pesto for a twist.
