Garlic Roasted Vegetables

A flavorful and healthy side dish featuring a variety of roasted vegetables infused with garlic and herbs.

Ingredients

  • 2 cups Broccoli florets
  • 2 cups Carrots
  • 1 medium Red bell pepper
  • 1 medium Zucchini
  • 1 medium Red onion
  • 4 cloves Garlic (minced)
  • 1/4 cup Olive oil
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons Balsamic vinegar
  • 1/4 cup Parmesan cheese (grated)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop the vegetables into uniform-sized pieces.
  3. Add olive oil, minced garlic, thyme, rosemary, salt, and pepper to the vegetables.
  4. Spread the vegetables evenly on a baking sheet and roast for 20-25 minutes.
  5. Remove from the oven, drizzle with balsamic vinegar, and sprinkle Parmesan cheese.
  6. Return to the oven for an additional 5-7 minutes until the cheese is melted.
  7. Serve hot with optional balsamic drizzle.
