  • 1/4 cup Fresh Lemon Juice

  • 3 cloves Garlic, minced

  • 1 cup Couscous
  • 1 cup Vegetable Broth or Water
  • 1 cup Seasonal Vegetables (such as bell peppers, cucumbers, or cherry tomatoes)
  • Salt and Pepper to taste

Instructions

  1. Marinate the skirt steak in a mixture of olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
  2. Bring 1 cup of vegetable broth to a boil, then stir in 1 cup of couscous, cover, and let steam for 5 minutes.
  3. Preheat your grill on high heat and cook the marinated steak for 3-4 minutes on each side for medium-rare.
  4. Rest the steak for 5 minutes before slicing against the grain.
