  • 1 pound ground chicken
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes (with green chilies, optional)
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 cups tortilla chips, crushed
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground chicken in a skillet over medium heat for 5-7 minutes.
  3. Mix in the taco seasoning and a splash of water, simmering for a few minutes.
  4. Add the black beans, corn, and diced tomatoes, mixing well.
  5. Layer half of the crushed tortilla chips in a greased 9×13-inch baking dish.
  6. Repeat the layers with the chicken mixture and cheese.
  7. Bake for 25-30 minutes or until bubbly and golden.
  8. Garnish with fresh cilantro before serving.
