  • 4 Salmon Fillets
  • 1 Cup Fresh Herbs (Parsley, Dill, and Chives)
  • 1/2 Cup Breadcrumbs (preferably panko)
  • 2 Tablespoons Olive Oil
  • 1 Lemon (zested and juiced)
  • Salt and Pepper to taste
  • 1/2 Cup Sour Cream
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Fresh Dill (for the sauce)
  • Roasted Vegetables or Quinoa (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the herb mixture by pulsing herbs, breadcrumbs, olive oil, lemon zest, salt, and pepper in a food processor.
  3. Season the salmon fillets with olive oil, salt, and pepper.
  4. Slather the herb mixture generously over each salmon fillet.
  5. Bake in the oven for 12-15 minutes until flaky.
  6. Whip up the creamy dill sauce by mixing sour cream, Dijon mustard, lemon juice, and fresh dill in a bowl.
  7. Get creative with sides while the salmon bakes.
