Sweet & Spicy Jalapeño Raspberry Chicken

A flavorful dish combining the sweetness of raspberries with the heat of jalapeños, wrapped around tender chicken breasts.

  • 2 Chicken Breasts
  • 1 Cup Raspberries
  • 2 Tablespoons Jalapeño (Finely Chopped)
  • 1/4 Cup Honey
  • 1 Tablespoon Olive Oil
  • Salt and Pepper to Taste
  • Fresh Cilantro for Garnish (Optional)

Instructions

  1. Prep Your Chicken: Start by patting the chicken breasts dry with a paper towel. Season both sides with salt and pepper. Marinate for 30 minutes with olive oil and lime juice if desired.
  2. Make the Raspberry-Jalapeño Sauce: In a small saucepan over medium heat, combine raspberries, jalapeño, honey, and a pinch of salt. Cook for about 5-7 minutes until the mixture thickens slightly.
  3. Cook the Chicken: Heat a skillet over medium-high heat and add the olive oil. Cook the chicken for 5-7 minutes on one side, then flip and cook for another 5-7 minutes until the internal temperature reaches 165°F (75°C).
  4. Glaze the Chicken: Reduce the heat to low and pour half the raspberry-jalapeño sauce over the cooked chicken. Let it simmer for about 3 minutes to absorb the flavors.
  5. Rest and Serve: Remove the chicken from the skillet and let it rest for 5 minutes. Slice the chicken and serve with the remaining sauce drizzled on top and garnish with fresh cilantro.

Notes

You can reduce the spice by using less jalapeño or opt for sweet bell peppers.
