  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 teaspoons dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 (6-ounce) boneless, skinless chicken breasts
  • 1 ½ pounds yellow potatoes, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (plus more to taste)
  • 1 teaspoon black pepper (plus more to taste)
  • 4 small zucchinis, sliced into 1-inch pieces

Instructions

  1. Mix the Marinade: In a small bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, paprika, salt, and black pepper.
  2. Coat the Chicken: Place the chicken breasts into a resealable gallon bag or a shallow dish. Pour the marinade over the chicken.
  3. Seal & Chill: Seal the bag or cover the dish and let it marinate in the fridge for at least 30 minutes.
  4. Preheat Your Oven: While the chicken is marinating, preheat your oven to 425°F (220°C).
  5. Prep the Potatoes: In a large bowl, toss the cut potatoes with olive oil, garlic powder, salt, and black pepper until well coated.
  6. Spread & Cook: Spread the seasoned potatoes onto a baking sheet and roast for about 25-30 minutes.
  7. Sear the Chicken: In a large skillet, remove the chicken from the marinade and sear for about 5-6 minutes per side.
  8. Rest the Chicken: Once cooked, transfer the chicken to a plate and let it rest for a few minutes.
  9. Cook the Zucchini: In the same skillet, toss in the sliced zucchini and sauté for about 3-5 minutes.
  10. Portion It Out: Slice up your chicken and start filling your meal prep containers with potatoes, zucchini, and chicken.
  11. Garnish & Store: Sprinkle fresh herbs if desired, seal up your containers, and you’re set for the week!
