Instructions

  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, lemon zest, and dried lavender.

  6. Scoop and Shape: Drop tablespoon-sized scoops of dough onto the prepared baking sheets, at least 2 inches apart.
  7. Bake: Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Prepare the Filling: In a bowl, mix powdered sugar and lemon juice until smooth.
  9. Assemble Your Sandwiches: Turn half of the cookies upside down and spoon or pipe the lemon filling onto the flat side before placing another cookie on top.

Notes
