Low Carb Taco Casserole

A flavorful low-carb taco casserole that combines seasoned ground beef with vibrant veggies and cheesy goodness, perfect for any weeknight meal.

  • 1 lb Ground Beef
  • 1 cup Taco Seasoning
  • 1 cup Shredded Cheese (Cheddar or Mexican Blend)
  • 1 can Diced Tomatoes (drained)
  • 1 cup Cauliflower Rice or Shredded Zucchini
  • 1/2 cup Chopped Onions
  • 1/4 cup Green Peppers (optional)
  • Salt and Pepper to taste
  • Sour Cream and Avocado for topping (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium heat, breaking it up until it’s no longer pink (about 5-7 minutes).
  2. Add the chopped onions and green peppers, cooking until the onions are translucent (about 3-4 minutes).
  3. Season it up by sprinkling the taco seasoning, adding diced tomatoes, and mixing until well-combined. Let it simmer for another 2 minutes.
  4. Prepare the base by preheating your oven to 375°F (190°C) and spreading the cauliflower rice or shredded zucchini in a baking dish.
  5. Layer the savory ground beef mixture over the cauliflower rice or zucchini evenly.
  6. Top with shredded cheese and cover loosely with aluminum foil.
  7. Bake in the preheated oven for 25-30 minutes until bubbly and golden, removing the foil for the last 5 minutes.
  8. Serve and enjoy, topping with sour cream and avocado if desired.

Notes

You can prepare this dish ahead of time and store it in the refrigerator for later. For a spicier version, add jalapeños or green chilies.
