Mediterranean Meatball Bowl

A delicious and vibrant Mediterranean Meatball Bowl featuring juicy meatballs, roasted potatoes, and a crisp salad, perfect for busy weeknight dinners.

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups baby potatoes, halved
  • 2 tbsp olive oil
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the ground beef, breadcrumbs, Parmesan, egg, minced garlic, dried oregano, and a generous sprinkle of salt and pepper in a large mixing bowl.
  3. Form the mixture into 1.5-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Toss the halved baby potatoes with olive oil, salt, and pepper, and arrange them on the same baking sheet as the meatballs.
  5. Roast in the preheated oven for about 25-30 minutes until golden and cooked through.
  6. Combine the diced cucumber, halved cherry tomatoes, and thinly sliced red onion in another bowl, drizzle with olive oil, lemon juice, and a sprinkle of salt and pepper, then gently toss.
  7. Plate with roasted potatoes, meatballs, and the salad, sprinkling crumbled feta and chopped parsley on top.
  8. Squeeze some lemon juice over the bowl just before serving.

Notes

Pair with crusty bread or tzatziki sauce for extra flavor.
