Delightfully Simple Mushroom and Tofu Stir-Fry

A vibrant and flavorful Mushroom and Tofu Stir-Fry that is easy to make and packed with nutrients, perfect for busy weeknights or cozy dinners.

Ingredients

  • 1 block of firm tofu
  • 2 cups mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • Assorted vegetables (e.g., bell peppers, broccoli, carrots)
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. Drain and press the tofu: Remove excess liquid and wrap in a towel for 15 minutes.
  2. Cube the tofu: Cut into 1-inch bite-sized cubes.
  3. Heat the olive oil: In a skillet, heat oil over medium-high heat.
  4. Sauté tofu: Add tofu and cook for 4-5 minutes on each side until golden brown.
  5. Remove and set aside: Transfer cooked tofu to a plate.
  6. Cook the mushrooms: In the same pan, add more olive oil if needed and sauté mushrooms for 3-4 minutes.
  7. Add garlic and ginger: Sauté for an additional minute until fragrant.
  8. Incorporate assorted veggies: Add vegetables and cook for 2-3 minutes until tender.
  9. Reintroduce the tofu: Add tofu back to the pan and pour in soy sauce, stirring to coat.
  10. Season to perfection: Taste and adjust seasoning with salt and pepper.
  11. Plate the stir-fry: Serve hot over rice or noodles, garnished with sesame seeds.

Notes
