One-Pan Honey Garlic Kielbasa & Veggies

An easy and delightful one-pan meal featuring honey garlic kielbasa and colorful veggies, perfect for busy weeknights.

  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy Sauce
  • 1 each Bell Pepper (Red & Yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the bell peppers and halve the baby potatoes.
  3. Mix together the honey, soy sauce, and minced garlic in a small bowl.
  4. Combine the veggies and kielbasa on a rimmed sheet pan.
  5. Drizzle olive oil over everything and pour the honey garlic mixture on top. Toss well.
  6. Spread the mixture into an even layer and roast for 25-30 minutes, stirring halfway through.
  7. Check for doneness, ensuring veggies are tender and slightly golden.
  8. Garnish with fresh parsley or green onions before serving.

Notes

For a spicier version, add red pepper flakes to the sauce. Feel free to customize the veggies based on what you have available!
