One Pot Pasta: The Ultimate Comfort Food

A simple, hearty one-pot pasta that combines fresh ingredients and bold flavors for a comforting meal.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 6 cloves garlic, minced
  • 14 oz. fresh tomatoes, diced
  • 2 cups chicken broth
  • 1 tablespoon chopped Italian basil
  • 8 oz. spaghetti
  • 1/4 teaspoon salt (or to taste)
  • 1/4 cup shredded Parmesan cheese
  • 1 tablespoon chopped Italian parsley

Instructions

  1. Sauté the aromatics: In a large pot over medium heat, drizzle in the olive oil. Once hot, toss in the chopped onions. Sauté for about 3-4 minutes until they turn translucent. Add the minced garlic and sauté for an additional minute.
  2. Add the tomatoes: Incorporate the diced tomatoes, cooking for about 3-5 minutes until softened.
  3. Pour in the broth: Carefully pour the chicken broth into the pot, stirring everything together and bringing it to a gentle boil.
  4. Mix in the spaghetti: Once boiling, add the spaghetti, pushing it down gently into the broth mixture. Reduce heat to medium-low and cover, stirring occasionally. Cook according to package instructions, usually around 10-12 minutes.
  5. Season and finish: When cooked, stir in the chopped basil and season with salt to taste. Mix in the Parmesan cheese, allowing it to melt into the sauce.
  6. Garnish and serve: Sprinkle chopped parsley over the top before serving. Enjoy your delightful one-pot pasta!
