  • 3 tablespoons olive oil
  • 1.5 cups grated Parmesan cheese (freshly grated)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the red potatoes under cold water and scrub them.
  3. Cut them into quarters or halves.
  4. Toss the potatoes with olive oil, garlic powder, dried Italian herbs, salt, and black pepper in a large mixing bowl.
  5. Sprinkle in the grated Parmesan cheese and mix thoroughly.
  6. Line a baking sheet with parchment paper or lightly grease it.
  7. Spread the seasoned potatoes in a single layer on the baking sheet.
  8. Roast for about 25-30 minutes, stirring halfway through.
  9. Remove from the oven and sprinkle a bit more Parmesan on top if desired.
  10. Allow the potatoes to sit for a minute before serving.
