Peach Feta Salad

A vibrant and refreshing salad that combines sweet peaches, creamy feta, and fresh greens, perfect for summer gatherings.

  • 2 Fresh Peaches, sliced
  • 1 cup Crumbled Feta Cheese
  • 4 cups Mixed Greens (baby spinach, arugula, or spring mix)
  • 1/2 Red Onion, thinly sliced
  • 1/4 cup Fresh Basil, torn
  • 3 tablespoons Olive Oil
  • 1 tablespoon Balsamic Vinegar
  • 1 tablespoon Honey or Maple Syrup

Instructions

  1. Prepare the peaches by washing them, slicing in half, removing the pit, and cutting each half into wedges.
  2. Mix the greens in a large salad bowl.
  3. Add the sliced red onion to the greens.
  4. Toss in the peach wedges and crumbled feta cheese gently.
  5. Make the dressing by whisking together olive oil, balsamic vinegar, and honey or maple syrup.
  6. Drizzle the dressing over the salad and toss gently to coat.
  7. Finish with fresh basil on top.
  8. Serve immediately for best flavor.

Notes

Chill salad for 30 minutes before serving for enhanced flavors. Keep leftover salad in an airtight container in the fridge, best consumed within a day.
