Pesto Grilled Cheese

A flavorful twist on a classic comfort dish, this Pesto Grilled Cheese combines gooey cheese and vibrant pesto for a delightful sandwich.

Ingredients

  • 2 slices of bread (white, whole grain, sourdough, or ciabatta)
  • 2 slices of cheese (cheddar, mozzarella, or pepper jack)
  • 2 tablespoons of pesto (store-bought or homemade)
  • Butter (for spreading on the bread)

Instructions

  1. Gather your tools: a non-stick skillet, spatula, and ingredients.
  2. Butter one side of each slice of bread.
  3. Place one slice of bread in the skillet, butter-side down, with a slice of cheese on top.
  4. Dollop the pesto over the cheese and add another slice of cheese on top.
  5. Cover with the second slice of bread, butter-side up.
  6. Cook for 3-4 minutes until golden brown, pressing gently.
  7. Flip the sandwich and cook for another 3-4 minutes until both sides are golden and the cheese is melted.
  8. Transfer to a cutting board, let it cool for a minute, then slice diagonally.

Notes

Serve with a side salad or tomato soup for a perfect pairing.
