  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup pistachios, shelled and roughly chopped
  • 1 tsp vanilla extract
  • Optional: 1/2 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butters and sugars in a large bowl until light and fluffy.
  3. Add the eggs and vanilla, mixing until well combined.
  4. Combine the dry ingredients in another bowl, then gradually add to the wet mixture.
  5. Fold in the pistachios until evenly distributed.
  6. Scoop the dough onto a parchment-lined baking sheet.
  7. Bake for 10-12 minutes until the edges are golden.
  8. Cool for 5 minutes on the sheet, then transfer to a wire rack.
