Quick Healthy Pesto Chicken Lettuce Wraps

Ingredients

  • 2 Chicken Breasts
  • 1/2 cup Basil Pesto
  • 8 Lettuce Leaves (Romaine or Iceberg)
  • 1 Bell Pepper, thinly sliced
  • 1 Cucumber, diced
  • 2 Carrots, julienned
  • Nuts or Seeds (pine nuts, cashews, sunflower seeds)
  • Cheese (feta or goat cheese)

Instructions

  1. Cook the chicken by seasoning with salt and pepper, then cook in a skillet over medium heat for 6-7 minutes on each side.
  2. Shred the cooked chicken into bite-sized pieces using two forks or your hands.
  3. Mix the shredded chicken with basil pesto until well-coated.
  4. Prepare the veggies by slicing bell peppers, dicing cucumbers, and julienning carrots.
  5. Assemble the wraps by placing pesto chicken in the center of lettuce leaves and adding veggies, nuts, and cheese.
  6. Wrap the lettuce around the filling, folding the sides over.
  7. Serve on a platter, ready to impress!
