Quick Lemon Dessert Bars

Delightful zesty lemon bars that are quick to make and perfect for any occasion.

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/3 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking dish by greasing it with butter or lining it with parchment paper.
  3. Combine the all-purpose flour, powdered sugar, and a pinch of salt in a medium mixing bowl. Whisk until mixed.
  4. Add the melted butter and mix until it resembles wet sand.
  5. Press the mixture evenly into the bottom of the prepared baking dish.
  6. Bake for 15 minutes, until just starting to turn golden around the edges.
  7. Whisk together the eggs and granulated sugar in another bowl until smooth.
  8. Add the lemon juice, lemon zest, and baking powder, whisking until combined.
  9. Pour the lemon mixture over the warm crust.
  10. Return to the oven and bake for 20-25 minutes, until the filling is set and lightly jiggly in the center.
  11. Cool at room temperature for 1 hour, then chill completely in the refrigerator.
  12. Dust with powdered sugar and slice into squares before serving.

Notes

Serve chilled with whipped cream or ice cream. Experiment with flavor variations like adding berries or chocolate.
