Refreshing White Bean Salad

A light and refreshing salad bursting with flavor from cherry tomatoes, cucumbers, and creamy white beans, dressed with a zingy vinaigrette.

  • 1 can white beans (rinsed and drained)
  • 2 cups cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1 bell pepper (chopped)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh herbs (parsley, basil, or cilantro)
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Prep the beans: Rinse and drain the white beans in a colander.
  2. Chop the veggies: Dice the cucumbers, halve the cherry tomatoes, chop the bell pepper, and finely chop the red onion and fresh herbs.
  3. Mix it up: Combine the white beans, tomatoes, cucumbers, bell pepper, red onion, and fresh herbs in a large bowl.
  4. Make the vinaigrette: Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl.
  5. Dress the salad: Pour the dressing over the bean and veggie mixture and toss gently.
  6. Final taste check: Adjust seasoning if needed and allow to sit for 15-30 minutes before serving.
