Roasted Honey Garlic Dill Carrots with Feta

A colorful and flavorful side dish of roasted carrots with honey, garlic, dill, and feta cheese.

  • 2 lbs Carrots, cut into 1-inch sticks
  • 2 tbsp Olive Oil
  • 3 tbsp Honey
  • 3 cloves Garlic, minced
  • 2 tbsp Dried Dill or 1/4 cup Fresh Dill
  • 1/2 cup Feta Cheese, crumbled
  • Salt and Black Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prep the carrots by washing, peeling, and cutting them into uniform sticks.
  3. Make the flavor mixture by combining olive oil, honey, minced garlic, and dill in a bowl.
  4. Mix the carrot sticks with the flavor mixture until coated. Season with salt and black pepper.
  5. Arrange the carrots in a single layer on a parchment-lined baking sheet.
  6. Roast for 20–25 minutes, tossing halfway through, until golden brown and tender.
  7. Finish with a sprinkle of feta cheese over the hot carrots just before serving.
  8. Garnish with additional dill or lemon juice if desired.

Notes

Serve with grilled meats or on a salad for a refreshing twist. Can be prepared ahead of time by tossing the carrots in the mixture a few hours before cooking.
