Smashed Carrots

A fun and flavorful twist on a classic side dish that transforms humble carrots into a deliciously colorful addition to your dinner table.

Ingredients

  • 1 pound of carrots
  • 2 tablespoons olive oil
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel your carrots, cutting larger ones into sticks or chunks.
  3. Toss the carrots with olive oil to coat them generously.
  4. Add honey or maple syrup and soy sauce to the bowl, sprinkling with salt and pepper.
  5. Spread the carrots on a baking sheet lined with parchment paper and roast for about 20-25 minutes, turning halfway.
  6. Smash each carrot using a fork or potato masher to release their sweetness.
  7. Return the smashed carrots to the oven for another 5-10 minutes to crisp them up.
  8. Garnish with fresh herbs before serving.

Notes

Feel free to experiment with different herbs or add garlic for extra flavor. Leftovers can be tossed into salads or pureed into soups.
