Southern Sweet Onion Casserole

A comforting classic featuring sweet onions, creamy cheeses, and a crunchy topping, perfect for family gatherings or weeknight dinners.

  • 4 large sweet onions (such as Vidalia)
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 cup sour cream
  • 2 large eggs (lightly beaten)
  • 1 cup crushed butter crackers (like Ritz)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the onions thinly for even cooking.
  3. Sauté the onions in melted butter with salt and pepper for 15–20 minutes until caramelized.
  4. Mix sour cream, cheddar, mozzarella, and eggs in a bowl.
  5. Combine the sautéed onions with the creamy mixture and transfer to a greased baking dish.
  6. Add crushed butter crackers and drizzle melted butter over the top.
  7. Bake for 30-35 minutes until bubbly and golden brown.
  8. Serve it warm after cooling for 10 minutes.

Notes

For extra flavor, consider adding proteins like sausage or herbs like thyme. Store leftovers in the fridge for 3–5 days.
