Easy Garlic Olive Oil Pasta

A classic, simple pasta dish featuring spaghetti tossed in a rich garlic and olive oil sauce, perfect for weeknights and packed with flavor.

  • 12 ounces spaghetti
  • ⅓ cup extra virgin olive oil
  • 3 cloves garlic, grated, minced, or thinly sliced
  • 1 teaspoon red pepper flakes
  • 3 tablespoons flat-leaf parsley, finely chopped
  • Salt and pepper, to taste

Instructions

  1. Boil the pasta: Bring a large pot of water to a rolling boil. Add in 1½ tablespoons (20 grams) of salt. Once boiling, add the spaghetti and stir to prevent sticking. Cook until al dente (about 8-10 minutes), then reserve 1 cup of pasta water and drain the rest in a colander.
  2. Infuse the olive oil: In a large skillet, heat the olive oil over medium heat. Add the garlic and cook gently for 2-3 minutes until fragrant and golden (not brown).
  3. Combine the pasta and sauce: Add drained spaghetti into the skillet with the garlic oil. Toss, adding reserved pasta water gradually until you reach a creamy consistency.
  4. Spice it up: Sprinkle in red pepper flakes and season with salt and fresh cracked pepper to taste.
  5. Dress with parsley: Stir in the chopped parsley for a fresh burst of flavor.
  6. Plate and enjoy: Serve immediately, drizzling with extra olive oil if desired and top with grated Parmesan or lemon zest, if you like.
