Delightful Strawberry Lavender Jam

A fragrant and sweet homemade jam combining fresh strawberries and dried lavender, perfect for toast or desserts.

  • 2 cups strawberries, hulled and chopped
  • 1 tablespoon dried lavender flowers
  • 1 cup water
  • 1/4 cup chia seeds
  • 1/4 cup honey or maple syrup (adjust for sweetness)
  • Juice of 1 lemon

Instructions

  1. Prep the strawberries by hulling and chopping them into small pieces.
  2. Cook the strawberries in a medium-sized pot with water over medium heat, stirring occasionally for about 5-7 minutes.
  3. Add the dried lavender to the pot and simmer for another 3-5 minutes.
  4. Incorporate chia seeds, honey or maple syrup, and lemon juice into the mixture and simmer for 10-15 minutes, adjusting the consistency.
  5. Check the consistency by dropping a spoonful onto a plate; if it holds its shape, it’s done.
  6. Cool the mixture for a few minutes before transferring it to sterilized jars.

Notes

Store in the fridge for up to two weeks or consider water-bath canning for longer preservation.
