10-Minute Cucumber Radish Salad

A refreshing and easy salad featuring crisp cucumbers and radishes, perfect for warm days or quick side dishes.

  • 1 medium English cucumber
  • 78 medium red radishes
  • 1 shallot, peeled
  • 2 cloves garlic, peeled and minced
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon fresh lemon zest (optional)
  • 1/4 cup citrus vinegar or apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon maple syrup
  • 1 teaspoon dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by washing cucumbers and radishes under cold water. Pat dry and remove ends before slicing.
  2. Slice the cucumber into thin rounds.
  3. Slice the radishes thinly for optimal crunch.
  4. Chop the shallot and mince the garlic.
  5. Mix the dressing in a small bowl by whisking together vinegar, olive oil, lemon juice, maple syrup, and mustard until emulsified.
  6. Combine everything in a large bowl, including cucumbers, radishes, shallots, garlic, and dill. Toss with dressing.
  7. Season with salt and pepper to taste, and toss gently again.
  8. Chill for 5 minutes if desired before serving.

Notes

For variations, consider adding avocado, jalapeños, cheese, nuts, or experimenting with different herbs.
