  • 1 1/4 cups water or vegetable broth
  • 1 lemon (juiced and zested)
  • 1/4 cup fresh mint (chopped)
  • 1/4 cup fresh basil (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cucumber (diced)
  • 1/4 red onion (finely chopped)
  • Salt and pepper to taste
  • Olive oil (to drizzle)

Instructions

  1. Cook the Couscous: In a medium saucepan, bring your water or vegetable broth to a boil. Once boiling, stir in the couscous, cover it tightly, and remove it from the heat. Let it steam for about 5 minutes until the liquid is absorbed. Fluff it with a fork.
  2. Prepare the Veggies: While the couscous is steaming, chop your cherry tomatoes, cucumber, and red onion.
  3. Mix in the Fresh Herbs: In a large mixing bowl, combine the chopped mint and basil.
  4. The Lemon Factor: Zest and juice your lemon. Pour the juice and zest into the bowl with the herbs.
  5. Add the Couscous: Once the couscous is fluffed, add it to the herb mixture and toss everything together.
  6. Toss in the Veggies: Add your diced cucumber and halved cherry tomatoes to the bowl. Season with salt and pepper.
  7. Drizzle with Olive Oil: Finally, drizzle your olive oil over the salad and give it one last toss.
  8. Chill and Serve: If you have the time, let the salad chill in the fridge for about 30 minutes before serving.

Notes
