Caramel Apple Cheesecake Bars

A delicious dessert combining creamy cheesecake, sweet caramel, and tender apples in a graham cracker crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups chopped apples (peeled and cored)
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust: In a medium-sized bowl, combine the graham cracker crumbs and 1/4 cup of sugar. Drizzle the melted butter over the mixture and stir until the crumbs are well-coated and resemble wet sand.
  3. Press the crust into a 9×13-inch baking dish using the back of a measuring cup for even coverage.
  4. Bake the crust for 10-12 minutes, or until golden and fragrant. Remove it from the oven and let it cool slightly while you prepare the filling.
  5. Mix the cheesecake filling: In a large bowl, beat the softened cream cheese using a hand mixer or stand mixer on medium speed until smooth and creamy, about 2-3 minutes. Add in 1 cup of sugar and the vanilla extract. Mix until well combined.
  6. Add the eggs: Incorporate the eggs, one at a time, mixing well after each addition.
  7. Fold in the chopped apples and cinnamon until evenly distributed throughout the batter.
  8. Pour the cheesecake mixture over the prepared crust, spreading it out evenly.
  9. Drizzle caramel sauce over the cheesecake mixture. Use a knife or toothpick to swirl it through the batter.
  10. Bake for about 30-35 minutes, or until the edges are set and the center has just a slight jiggle.
  11. Cool the bars at room temperature for 30 minutes before transferring them to the fridge to chill for at least 2 hours.
  12. Slice into bars and drizzle more caramel sauce on top if desired.

Notes

These bars taste even better after chilling in the fridge for a day. Store leftovers in an airtight container for up to a week.
