Avocado Chocolate Cookies

Deliciously indulgent cookies made with avocado for a healthy twist on a classic treat.

  • 1 ripe avocado, mashed
  • 1/2 cup cocoa powder
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the avocado by cutting it in half, removing the pit, and mashing it until smooth.
  3. Combine the wet ingredients: honey (or maple syrup), coconut sugar, and vanilla extract, into the mashed avocado and stir until well combined.
  4. Mix the dry ingredients in a separate bowl: almond flour, cocoa powder, baking soda, and salt.
  5. Combine the dry ingredients with the avocado mixture, stirring gently until just mixed. Add dark chocolate chips if desired.
  6. Scoop spoonfuls of dough onto a lined baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are firm but the centers look slightly soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For extra chewiness, consider adding more sweetener or refrigerating the dough before baking.
