Avocado Corn Salad

A light and refreshing salad bursting with the flavors of summer, featuring grilled corn, creamy avocados, and zesty lime.

Ingredients

  • 2 cups grilled corn
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the corn by grilling it over medium heat until tender and slightly charred, about 10 minutes.
  2. Chop the avocados, tomatoes, red onion, and cilantro, and combine in a large mixing bowl.
  3. Combine the grilled corn with the chopped ingredients in the mixing bowl.
  4. Dress the mixture with olive oil, lime juice, salt, and pepper, and fold gently to combine.
  5. Chill the salad in the fridge for about 30 minutes before serving.

Notes

For a spicier version, add diced jalapeños. Substitute diced mango for a tropical twist.
