Balsamic Flank Steak with Grilled Zucchini and Whipped Feta

A flavor-packed dinner featuring marinated flank steak, grilled zucchini, and creamy whipped feta.

  • 1 lb flank steak
  • 1/4 cup balsamic vinegar
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 medium zucchinis, sliced
  • 1 cup feta cheese
  • 1/2 cup cream or Greek yogurt
  • 1 tbsp lemon juice
  • Lettuce for serving (optional)

Instructions

  1. Marinate the flank steak: Combine balsamic vinegar, minced garlic, olive oil, salt, and pepper in a bowl. Place the flank steak in a resealable plastic bag or a shallow dish, pour the marinade over, seal, and marinate in the fridge for at least 30 minutes or up to 4 hours.
  2. Prepare the grilled zucchini: Slice zucchini and toss with olive oil, salt, and pepper. Preheat the grill or grill pan over medium-high heat and grill zucchini for about 3-4 minutes per side.
  3. Whip the feta: In a food processor, combine feta cheese, cream or Greek yogurt, and lemon juice. Blend until smooth and creamy. Adjust seasoning if necessary.
  4. Cook the flank steak: Remove the steak from the fridge, let it come to room temperature, and preheat the grill to high heat. Grill steak for about 4-5 minutes per side for medium-rare. Rest for 5 minutes before slicing.
  5. Slice and serve: Slice steak against the grain and arrange it on a platter with grilled zucchini and dollops of whipped feta.

Notes

Serve with fresh lettuce or arugula for added crunch. Drizzle with any remaining marinade for extra flavor.
