BBQ Chicken Pineapple Flatbread

A flavorful combination of BBQ chicken, sweet pineapple, and melty cheese layered on a crispy flatbread, perfect for summer gatherings.

  • 1 flatbread (7.5 oz)
  • 2 tbsp minced garlic
  • 1.5 lb boneless, skinless chicken breast
  • 1/3 cup chicken broth
  • 12 oz BBQ sauce
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 1/4 cup shredded mozzarella cheese
  • 1/3 cup shredded Monterey Jack with jalapeño peppers
  • 1/4 cup red onion, sliced lengthwise
  • 1 cup pineapple, finely chopped
  • 2 tbsp cilantro
  • Additional BBQ sauce for topping

Instructions

  1. Prep the slow cooker: In your slow cooker, combine the chicken breasts, chicken broth, BBQ sauce, garlic powder, onion powder, sea salt, and black pepper. Make sure the chicken is well coated with the sauce.
  2. Cook the chicken: Set your slow cooker on low and let it work its magic for about 6-8 hours, or on high for 3-4 hours. When it’s ready, shred the chicken directly in the slow cooker and mix it up with the juices for maximum flavor.
  3. Preheat your oven: Preheat your oven to 425°F (220°C).
  4. Build the flatbread layer: Place the flatbread on a baking sheet. Carefully layer the shredded BBQ chicken evenly over the flatbread.
  5. Add the cheese and toppings: Sprinkle the mozzarella and Monterey Jack cheese over the chicken. Follow with red onion slices, chopped pineapple, and cilantro.
  6. Bake to cheesy perfection: Pop it into the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown. Keep an eye on it to avoid over-browning!
  7. Drizzle additional BBQ sauce on top and let it sit for a few minutes. Then slice it up and serve!

Notes

For extra crispiness, consider giving your flatbread a quick toast for 5 minutes before adding the toppings. Substitute chicken with rotisserie for a quicker dish.
